Our land is in a unique, completely unspoilt enclave of Sicily with the peculiarity of surrounding the northern part of Lake Garcia.
The rich water together with our farm’s south-facing aspect allow the olive trees to be exposed to Sicily’s powerful sunlight throughout the day, all of which creates the perfect growing conditions for our olives.
A land rich in minerals and its varying altitudes that range from 200 m to 490 m above sea level provide ideal conditions that enable us to obtain different, richly nuanced, aromatic olive oils from our farm that together create our excellent monovarietal extra olive oils and contribute to creating our extraordinary blends.
Our organic olive grove covers 115 hectares, with trees of different ages. A piece of land with 48,000 olive trees of five varieties, three native (Nocellara del Belice, Biancolilla and Cerasuola) and two non-native (Picual and Arbequina), all grafted to wild Sicilian olive trees, which goes against the current trend of planting cloned olive trees and back to the traditional method.
In addition, we farm old Sicilian wheat varieties on 100 hectares with the aim of contributing to their revival.
Our olive mill is at the heart of our production and where all our work over the year to grow the best olives is turned into the magic of our organic extra virgin olive oil. We have state-of-the-art technology and an olive mill tailored to our requirements made by Mori Tem that allows us to transform our fruit with great care so that all of the aromas and health properties of our olives are conserved being one of the most modern organic sicilian farms.
The mill is in the middle of our farm so we can process the olives within two hours of it being harvested. The olives are not only cold-extracted (below 27 ºC), but also cooled at every stage of the extraction process so that the temperature is kept at between 22 and 25 ºC.
This way of working allows the formation of more intense, complex flavours, as well as the extraction of the natural antioxidants found in olives. It takes 30 minutes at most from the time the olives go into the mill until extra virgin oil pours out. Thanks to the short extraction times, the oil obtained has concentrated aromas and healthy properties.
The oil obtained is filtered and stored in stainless steel containers in a nitrogen-controlled atmosphere that retains the oil’s organoleptic properties and nutritional value for as long as possible.
Our commitment to the environment was one of the driving forces behind our farming project.
We conceived an environmentally friendly organic farm from the very beginning for the production of our extra virgin olive oils, growing our crops of ancient Sicilian grains and producing honey.
We respect and preserve our farmland by reducing our environmental impact as much as possible. To do so, we make every endeavour to become self-sufficient so that our farm has a zero environmental impact.
We built the two lakes that enable us to water our trees in the summer using the reserves built up from the spring rainfall. This practice allows the olive trees to bear the olives until they ripen without undergoing water stress and to retain the very best organoleptic properties.
We use organic fertilisers that enrich the land to provide the nutrients that the trees require. We also return everything left over after extraction in the olive mill to the plants: once the oil has been drawn off, the olive pulp and stones are put back into the land to restore the natural nutrients to the trees and creating an effective cycle of fertilisation.
We let the grass grow on the fields all year round to reduce the evaporation of water from the land in the summer and to help recover its natural ecosystem.
We are working to cover our two lakes with solar panels to gain energy independence.
